15-minute Pasta Smash

You arrive home at 5pm and have ZERO idea of what to feed the kids who are turning into crazed monsters before your eyes.  I promise you can get this tried and tested, tasty, basic recipe on the table in 15 minutes flat.  Guaranteed! Mix and match ingredients as much as you like. It'll never be the same dish twice.

2 adults + 2-3 kids 15 minutes (while pasta is cooking) 15 minutes

Ingredients

  • 2 cups dry pasta shapes - choose your favourites
  • 1 cup shredded meat, chicken, fish or cubed fried tofu - I LOVE to use hot smoked salmon (buy this straight from the deli section of your supermarket, leftover BBQ chicken or roast meat
  • 2-3 cups mixed veggies of your choice - Try: carrot, broccoli, cauliflower, beans, snow peas or sugar snaps, cherry tomatoes, capsicum, zucchini, baby spinach, mushrooms, sliced shallots
  • 2 tbsp pesto (or 1-2 tbsp olive oil)
  • 1/4 cup Parmesan cheese (or other grated cheese)

Instructions

  1. Bring water to the boil (pre-boil in your kettle if time is of the essence)
  2. Place pasta in the water and boil according to the directions
  3. Set your steamer on the stove with a little water in the bottom to heat till boiling
  4. Meanwhile, chop your veggies and shred/dice your protein (meat/chicken/fish or tofu)
  5. Place veggies in your steamer or microwave oven till they're cooked how you like them. Leave them raw if you prefer them this way.
  6. Drain pasta and toss through the pesto or olive oil
  7. Toss through the veggies and protein
  8. Sprinkle with parmesan (or other) cheese
  9. Serve to the hungry hordes
